Cooking with a Bulgarian Accent

Cooking with a Bulgarian Accent is a cookbook written by Margarita and Bozidar Janakiev who opened their Bulgarian restaurant called Café Sofia Restaurant in Winchester, Virginia in 1977.  In 1996, they wrote a cookbook  full of traditional Bulgarian recipes.  It appears that they cook with fresh ingredients from scratch, using simple methods.  A lot of the recipes look different from what I’m used to cooking, but delicious at the same time.  I chose a recipe called “Shepherd’s Salad” because I had all the ingredients on hand, most of which came out of my garden.  The salad was really good and Vince really enjoyed it.  He said he especially liked the addition of mushrooms, which I normally don’t use in my cucumber salad.  The only change I made was omitting the savory because I didn’t have any.



Shepherd's Salad

Shepherd’s Salad

2 hard-boiled eggs, cooled, peeled, and sliced

1 cucumber, peeled and diced

2 tomatoes, cubed

½ red bell pepper, chopped

1 bunch green onions, sliced

½ cup fresh mushrooms, cut into quarters

2 tablespoons fresh basil, finely chopped

3 oz. Feta cheese crumbles

½ cup olive oil

1/3 cup balsamic vinegar

1 clove garlic, minced

Salt and pepper, to taste

1/3 teaspoon savory

1 handful parsley, chopped

Combine cucumber, tomatoes, red bell pepper, green onions, mushrooms, basil, and Feta in a large bowl.  Make dressing by combining olive oil, balsamic vinegar, minced garlic, salt, pepper, savory and parsley; mix well.  Pour over the veggies and toss gently.  Serve on a plate with sliced eggs around it.
